Hanger Steak is a long, thin cut of meat that is a bit tougher than Skirt Steak. It is also known as Butchers Steak, since the butcher would often keep if for themselves since it demonstrates qualities similar to other marbled, more expensive cuts like a Ribeye or New York Strip Steak.
